I don’t know about you, but Creamy Chicken and Wild Rice soup is a fav of mine. This recipe from Cooking Classy is a definite crowd pleaser! Serve with crusty bread and a simple apple and spinach salad. (If you have a picky eater, be sure to leave the dressing on the side!)
Skip the meat and make a Veggie Lasagna to get you through the middle of the week. Best part? You can assemble the lasagna ahead of time and just bake. No midweek hassle! Steamed broccoli on the side and a scoop of pumpkin ice cream for dessert.
Thursday is our Moms Night Out (and hopefully you’re joining us!). Leave the sitter with the ingredients for Apple Gouda Grilled Cheese (you can always substitute cheddar!), carrot sticks and fresh fruit. Everyone is happy.
