It’s way too hot to turn the oven on. They’re saying that the “high” should dip — ever so slightly — below 90 by the end of the week. But why turn the oven on when it’s blistering out? Here are 5 easy family-friendly you can make this week. Our kid-approved, no-oven-required edition.

Monday: If you’ve been following this series for a while now, you may have realized that our family has a bit of a ‘thing’ for all dishes caprese. Mozzarella and tomato? It just screams summer! These Avocado Caprese Wraps are delicious and nutritious. Serve with sliced watermelon and you’ve got an easy, beat-the-heat meal to kick off the week!
Tuesday: Chopped Chickpea Greek Salad. Tons of fiber, easy to pick-up with little fingers if you have toddlers running around the house and sophisticated enough taste for your equally picky eating teen. Crusty bread and fruit popsicles for the win.
Wednesday: Rotisserie chickens straight from the deli are my favorite weeknight short cut. Especially when it’s too hot to cook! Simply love this chicken and fresh berry salad with homemade buttermilk herb dressing. No mayo required.
Thursday: It’s a good week to get that veggie spiralizer out of the box. Try no-noodle pad thai or, for those of you with a nut allergy in the house (like us), these Zucchini Noodles with Sun-Dried Tomato Basil Pesto. Amp up the veggie power with a simple green salad with fresh snap peas.
Friday: We had the most amazing sweet corn chowder at Michael Mina’s The Handle Bar in Jackson Hole last week. Still dreaming about it. This Summer Corn Chowder from Cooking Classy is similar. And if there is leftover chicken from Wednesday, you can definitely toss it in!
