Memorial Day Weekend is coming… just have to get through the week! In case you’re looking for a little dinner inspiration, here’s what we’re cooking this week.

MONDAY: Easy One-Dish Rosemary Lemon Chicken with Potatoes
Make dish duty a snap with one-pan cooking. This one-dish rosemary lemon chicken with potatoes is a fan favorite… my kids absolutely love it!

TUESDAY: Fresh Veggie Noodle Bowl
All kids love noodles, right? Shave off time in the kitchen by serving noodle bowls topped with fresh veggies and jazzing up store-bought chicken broth. A little garlic and ginger go a long way! Best part is your kids can customize their fresh veggie noodle bowl by topping it with the veggies they like.

WEDNESDAY: Chipotle Pulled Beef Tacos with Greek Salsa and Avocado Crema
This recipe had me at crema. Or avocado. The beef cooks in the crockpot all day and all you’re doing at night is adding the salsa and sides. Corn on the cob and sliced berries will go nicely!

THURSDAY: Honey Garlic Salmon and Baked Sweet Potatoes
If you’re a shop once for the whole week person, make this dinner on Monday when the fish is fresh. I always like cooking fish same or next day. This sticky sweet salmon is a great way to get the kiddos to be a little more adventurous with their food. Serve with baked sweet potatoes and green beans.

FRIDAY: Grilled Caprese Pizzas
It’s the long weekend! YES! Celebrate by cracking open the grill for a little grilled pizza action action. Have the kids get in on the fun by making their own. Maybe pair it with a Mint Limoncello Spritzer? Happy Weekend!
