Pat and I met while we were studying abroad in Italy. Of course, there was a certain amount of ‘carefree’ ness that comes with being twenty and living abroad, but there was also something about being in Italy that invited you to take a breath. Have an actual conversation. Two hours for dinner was a quick evening. You could get lost in a conversation on the piazza after lunch because the city shut down for a break from noon to two — you had nowhere to be for that moment in time. Every day.

That’s the inspiration for this first summer cocktail time-out: a mint limoncello spritzer. Sweet coastal Italian flavor, warm breezes off of the Positano shoreline, and an invitation to converse.

Don’t forget the garnish and fancy glasses. Why? Because it’s Thursday.

Light and refreshing wine spritzer with a twist of mint and lemon.

  1. 1/4 cup Limoncello
  2. 3 sprigs of fresh mint
  3. 1 Lemon (plus lemon slices to garnish)
  4. 1 cup White Wine
  5. Crushed Ice
  1. Using a blender, combine limoncello, one sprig of mint, the juice of one lemon, and zest from half the lemon. Strain.
  2. In a cocktail shaker, mix wine, lemon mixture, and crushed ice.
  3. Pour into glasses. Garnish with mint sprig and lemon slice.
