Slow cooker dinners are not only for the shorter wintery days. A great recipe in the slow cooker can be used throughout the year — and this one is perfect for those evenings where there’s a little more light on your dinner table and the first signs of spring out your front door.

- 1 ½ lb flank steak
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1 tsp cracked black pepper
- 3 tbsp tamari or low sodium soy sauce
- 1 tsp honey
- 2 garlic cloves, minced
- zest from 1 lime
- 1 yellow onion
- 4 bell peppers, any color
Other fixings: flour or whole wheat tortillas, green onions, shredded cheese, sliced avocado, cilantro, salsa, sour cream
Chop onions and put in the bottom of the slow cooker. In a small bowl, mix together the dry spices and then rub over meat before going into slow cooker. In a separate bowl, whisk honey with soy sauce and drizzle over meat once it’s in place inside the slow cooker pot.
Zest lime on top, add minced garlic, and then the sliced bell peppers and place on top of meat. Turn slow cooker on to high and cook for 6 hours. Meat should easily shred with two forks after 6 hours.
Once meat is cooked and shredded, serve with tortillas and fixings. Easy and simple dinner for spring time! Enjoy!
