Fall is in full-swing and the last thing you want to think about is the dreaded “what’s for dinner” this week.  So we’ve done the thinking for you! Here’s a kid-friendly weeknight dinner plan that’s sure to please all of the foodies in your house. Picky ones, too.

Family Weeknight Dinners - (cool) progeny

family friendly weeknight dinners this week

I don’t know about you, but Creamy Chicken and Wild Rice soup is a fav of mine. This recipe from Cooking Classy is a definite crowd pleaser! Serve with crusty bread and a simple apple and spinach salad. (If you have a picky eater, be sure to leave the dressing on the side!)

Put a spin on the traditional beef-and-salsa taco Tuesday and whip up these Maple Chipotle Salmon Tacos. All you need is a side of Cilantro Lime Rice and dinner is served.

Skip the meat and make a Veggie Lasagna to get you through the middle of the week. Best part? You can assemble the lasagna ahead of time and just bake. No midweek hassle! Steamed broccoli on the side and a scoop of pumpkin ice cream for dessert.

Thursday is our Moms Night Out (and hopefully you’re joining us!). Leave the sitter with the ingredients for Apple Gouda Grilled Cheese (you can always substitute cheddar!), carrot sticks and fresh fruit. Everyone is happy.

Nothing says “Let’s get the weekend started” like a good meal. And limited dishes. This One Pan Parmesan Pork Chops and Veggies is exactly right for a meal that’s easy to make and high on taste!
