Last week we had the no-oven edition of family-friendly dinners. This one might just be the let’s-grill-and-bbq-and-hold-onto-summer edition! Here are five classic family favorites (quesadillas, tacos, pasta, pizza and skewers) with some fun foodie twists that take advantage of seasonal produce. All the flavors of late summer fruits and veggies in five meals you can get on the table in under 30 minutes.
Take a look, make your list, hit the store on Sunday night and have a week’s worth of kid-approved meals!

Monday: You can still get local blackberries (check out the Misty Valley Farm Stand!) and they are the perfect compliment to chicken. These Blackberry-Chipotle BBQ Chicken Quesadillas will definitely amp up your standard quesadilla fare and be a hit with the whole fam. If you have a kiddo that doesn’t like a lot of spice, may want to skip the chipotle chili in adobo sauce or reduce it!
Tuesday: Hello, yum! Skip the store bought sauce and make this easy fresh pasta meal! Fresh Cherry Tomato Sauce comes together in under thirty minutes. Pair with your favorite pasta, green salad, and crusty bread.
Wednesday: Keep the heat out of the kitchen with this mid-week grilled dinner! Grilled Chilean Beef Skewers with Smokey Chimichurri. Serve with rice (you can absolutely make the rice the night before and reheat!) and sliced peaches. If you’re really limited on kitchen time, make the skewers and marinade the night before, too.
Thursday: Make your slow cooker do the heavy lifting and make Barbecue Pork Tacos with Honey Mustard Slaw for dinner! Serve with corn on the cob and sliced watermelon.
Friday: Toast the weekend with Grilled Pesto Veggie Pizza (and use up all of the zucchini in the garden!). Goes from ingredients to table in about twenty minutes. So you can get to the weekend faster!
