Monday: Don’t put the grill away from the weekend. Grilled Mexican steak with avocado salsa. Serve with grilled corn-on-the-cob and sliced watermelon.
Tuesday: Loaded baked potato salad. ‘Nuff said.
Wednesday: I don’t think we ever get through a week without pasta night. I love the extra nutrient kick this “green” pasta (as my toddler calls it) from the avocado. Great way to use leftover corn from Monday night and those fresh tomatoes from your favorite veggie stand. Your kids will love this Basil and Garlic Avocado pasta.
Thursday: Perfect poolside menu: grilled pineapple teriyaki wraps and fruit kabobs.
Friday: Friday night has become synonymous with pizza night at our house. Mix up the typical cheese-and-marinara for this BBQ Chicken pizza. Time-saving trick: throw two extra chicken breasts on the grill Thursday night and you’re already ahead of the game for Friday! Serve with a green salad and sliced peaches. Any maybe a little white sangria… (for the adults, of course).
