Monday: A light dinner that goes together quickly with store-bought rotisserie chicken. Love that this Greek tzatziki chicken salad goes together with yogurt instead of mayo since our little guy has an egg allergy. It does require 30 minutes of chilling (although it’s assembled in about 10!). Serve with sliced cantaloupe and crunchy broccoli tossed in your favorite vinaigrette.
Tuesday: If you haven’t guessed by now, I’m a big fan of one-sheet dinners for weeknight dinners. This is a super simple and flavorful pork chop recipe. Best part, it cooks right with the green beans and potatoes.
Wednesday: Try these sweet potatoes stuffed with chipotle black bean and corn salad or make it sweet potato bar night! So much fun, everyone can customize their own. If you have a crazy schedule, roast the potatoes the night before or even in the morning. They reheat in a snap. Serve with sliced watermelon and a simple green salad.
Thursday: Caprese salad meets avocado toast– yes, please! This Caprese Avocado Toast is a definite crowd pleaser. Serve with a simple grilled chicken and a side of berries.
Friday: DIY take-out. This easy shrimp-fried rice recipe goes together in about 20 minutes. It’s just as delicious without the egg if you have an allergy in the house.
