I know, I know. We’re in the middle of a three-day weekend. Who can even THINK about dinner next week? Just bookmark this handy meal plan for your-just-back-from-the-holiday-picnic grocery store run and you’ll have easy meals all week long. Here’s what we’re cooking…
family-friendly dinners this week
Monday: It’s BBQ season! Check out these smoked turkey burgers with two dipping sauces. My kids love the tangy cilantro yogurt one. And hey, it’s a holiday from ketchup — which is more like an entire food group than condiment at our house. Serve it at your family BBQ with this amazing strawberry lemon cake. Seriously. It’s my favorite.
Tuesday: Definitely hard to get back to routine after a three day weekend… and the last few weeks of school always seem to be jam packed. One pan lemon chicken and asparagus goes from oven to table in just 40 minutes (and 20 of that is cooking time). Sliced oranges and crusty bread compliment nicely.
Wednesday: We had fish tacos on the boardwalk this weekend and I am already craving them again! This kid-friendly version Annie’s Eats has mango salsa. The avocado cream sauce is reminiscent on the cilantro yogurt sauce from the turkey burgers. Serve with corn on the cob.
Thursday: One thing I know about my kids, if I serve something up in a cute container, they are more likely to eat it. Black bean stuffed peppers are a fab meatless meal that’s still packed with protein. Best part? Prep them the night before and just pop them in the oven after school/when you get home from work. Serve with a healthy bowl of mixed berries.
Friday: End the week with a meal that gets on the table in 20 minutes flat. Easy peasy pasta with chicken sausage. Toss a simple spinach salad with pumpkin seeds, blackberries, and lemon vinaigrette. Buon appetito!
