It is possible to enjoy the Super Bowl without all the high calorie, heavy snacking. It never really feels worth it the next day anyway! Enjoy this simple fresh recipe that is easy to make and doesn’t weigh you down.

I played around with a few different recipes, used some of my most favorite flavors and came up with this savory Mediterranean style layered dip. It has awesome depth and decadent creaminess with layers of bright lemon and feta. Serve it with corn tortilla strips and dig into some seriously healthy snacking. Make extra because this will get devoured!

Mediterranean Layer Dip Ingredients

  • block of feta (I prefer the kind that is sold in it’s brine)
  • hummus (at least a cup)
  • rough chop kalamata olives
  • sundried tomatoes
  • 1 cup of garbanzo beans
  • finely chop parsley
  • red pepper flakes (optional)
  • 1 cucumber, diced
  • juice from ½ a lemon or more
  • ¼ cup toasted pine nuts
salt and pepper to taste

How to Make Mediterranean Layer Dip

Start by crumbling the feta into a variation of sizes and chunks (add optional red pepper flakes if you’re using them) in a bowl. Set aside.

Now it’s time to start layering.  First layer and spread the hummus on the bottom of bowl, drizzle with olive oil, and add fresh lemon juice. Now add 1/4 cup of crumbled feta. Then layer the following in this order: sundried tomatoes (try to add more around the edges), entire cup of garbanzo beans, kalamata olives, diced cucumber, chopped parsley, and a healthy dose of cracked black pepper.

Ready for the second half? Time fore more layering: more feta cheese, then sundried tomatoes, more olives, more cucumber, more parsley, more sundried tomatoes, and sprinkle the last bit of feta on top. Squeeze more lemon juice over the entire dish and top with toasted pine nuts. Garnish with more fresh cracked pepper.
