delicious (and healthy!) strawberry ice pops


One word describes childhood and summertime: popsicles.Cool, refreshing and best if the juice is running right off the chin.

Which is why I was thrilled to find this recipe for homemade {and healthy!} strawberry ice pops. No white sugar needed! Just fresh berries, honey and lemon. With all the sugary options in the grocery store aisle, we were excited to try this not-so-likely-to-amp-up-your-kid option. Plus, we had a ton of strawberries from our strawberry picking adventure and this seemed like an excellent thing to do with them!

Epic hit. The Bug devoured her pop. And another item crossed off our summer bucket list {although I have a feeling this may be the summer of ice pop experimentation!}.

Healthy Strawberry Popsicles

Makes 6 large popsicles (or 4 large and a tray of ‘popsicle’ cubes)

Ingredients:

3 cups fresh (or frozen, thawed) strawberries, hulled and halved
1/2 cup honey or agave syrup
3 tablespoons fresh lemon juice

Assembly

Combine all ingredients in a food processor or blender. Process until smooth.

Poor into popsicle mold.

Freeze for four or more hours.

Remove from popsicle mold (you may have to leave the frozen mold out on the counter for a few minutes or run under warm water).

Enjoy!
