Ever needed a fabulous kid pleasing recipe that required zero brain power? You know, one of those things you can throw together at 10:00 PM after a ridiculously long day without fear of burning the house down or needing to cut intricate shapes. {Read: no fondant.} I always love the seductiveness of cute kid-inspired desserts on Pinterest or Martha Stewart’s site, but never have the time or patience to tackle them.
Where was I last night at 9:00 PM? The baking aisle of the grocery store. My mission? Something easy peasy for the school bake sale, to be delivered to the school this morning. Luckily, I had prepared for my procrastination and at least had these fun rice crispy treats in mind. A super adorable twist on a traditional snack from Gimme Some Oven.
Why rice crispy treats? I didn’t have to worry about falling asleep and burning them. Yes, really, that’s how my decision-making-process goes these days.
The Bug literally squealed when she saw these on the table this morning. “Mom, confetti treats!” Hence, what these are now called in our house. {PS: Of course I let her have one for breakfast. It is whole grain after all, right?}
Just in case you find yourself in a similar situation one night, I’m giving you a photo tutorial.
Ingredients:
Melt butter in a saucepan over medium-low heat.
Add marshmallows and stir while they melt. Silky smooth (in a sticky sort of way!). Add cake batter one heaping tablespoon at a time and stir until smooth and clear.
Add rice crispies and one-half of your sprinkles. Combine until sticky.
It’ll look something like this!
Press into greased pan and top with remaining sprinkles. Press sprinkles in with back of a spoon. Let cool. (I let mine cool for 2 hours and then covered until morning).
Slice and serve!
Or put into plastic sandwich bags and tie with whatever ribbon you have lying around. Bake sale ready.
